Your first-ever kitchen job was…

…at my uncle’s bustling food stall in India when I was just 14 years old. That’s where my love for cooking and food flavours truly blossomed.

Career highlight to date?

Winning a 2 AA Rosette at The Cavendish Hotel in September 2013 alongside my incredible kitchen team. It was a proud moment for all of us.

Describe your cooking style and what diners at St Michael’s Manor can expect.

I specialise in Contemporary Modern cuisine, infused with bold Indian flavours, seamlessly integrated into modern British dishes. Diners can expect an innovative and flavorful dining experience.

You have a particular interest in plant-based cooking – where did that come from?

Growing up in India, where 20-30% of the population is vegetarian, sparked my interest in plant-based cooking. It’s a thrilling challenge to incorporate these principles into modern cuisine, and keeps me constantly inspired.

Most memorable moment at work?

Working with Gordon Ramsay at Pétrus in Knightsbridge, a Michelin-starred restaurant, was an unforgettable experience. His passion and precision left a lasting impression on me.

Biggest mistake you’ve ever made in the kitchen ?

During a wedding breakfast for 135 guests, our panna cotta dessert failed to set. With 130 people eagerly awaiting their dessert, we swiftly transformed it into a deconstructed panna cotta. The flavour remained delightful, and the presentation tweak turned a potential disaster into a success.

Have you cooked for any celebrities?

I had the pleasure of cooking for Indian actresses (and sisters) Kareena Kapoor in 2003 and Karishma Kapoor and her family in 2005.

Favourite chef and why?

Jason Atherton. His Michelin-starred, globally acclaimed style, blending Asian influences with French techniques, is something I deeply admire.

Favourite cookbook?

The French Laundry Cookbook is my go-to for culinary inspiration.

You’re tired and hungry – what’s your go-to for a quick and easy supper?

Fish curry and rice. It’s quick, easy, and exudes the comforting essence of a home-cooked meal.

Guilty food pleasure?

Sweets and desserts. Although not the healthiest, the tasting process in the kitchen is something I thoroughly enjoy.

Favourite food nationality and why?

Jamaican cuisine, especially jerk chicken, captivates me with its rich spices and robust flavours.

Favourite place to go locally for a great meal?

The Prae Wood Arms in St Albans. Their simple and reliable menu, warm hospitality and well-kept garden make it a hidden gem for any family.

Best kitchen gadget you’ve ever owned?

The Thermomix has been an invaluable addition to my kitchen.

Dish you’ve been most proud of in your career?

My Curried Cauliflower Steak with Tomato Chutney, Sago Crisps, Onion Bhaji, and Coconut Velouté. It’s a staple on my vegan menu at St Michael’s Manor and a personal favourite.

Most underrated ingredient?

Nutmeg. Its versatility and unique flavour are often overlooked.

Do you have a favourite local producer, deli or farmshop for picking up great ingredients?

Foxholes Farm in Hertford is my choice for quality ingredients. From meat to veg, their produce is top-notch.

Top cooking tip/ kitchen mantra?

I live by two essential cooking tips: mastering knife technique and emphasising seasoning and flavours. My kitchen mantra is ‘Take your time and hurry up,’ balancing a relaxed atmosphere with the urgency needed for top preparation and service.
