RECIPE: Baked Cookie Dough Pudding
As we all shimmy our way back into entertaining mode - here's an awesome, Baked Cookie Dough Pudding recipe, from the brilliant Pudding Stop, St Albans. Serve this best-selling baby up and watch your friends come clamouring for the recipe.
If you haven’t made it to The Pudding Stop in St Albans yet, I very much recommend you high-tail it over there and stock up on some stash. And by stash, I mean PUDDING. Specifically, the most delectable sweet treats, cakes and pastries that every were. Sticky toffee pudding, crumble, cake, brownies, doughnuts, cinnamon buns, pastries, pancakes, brioche… I could go on. Hungry yet? Well just as well we’ve got this great baked cookie dough recipe to see you through until you can make a pudding stop for real.
BAKED COOKIE DOUGH PUDDING
110g unsalted butter
85g light brown sugar
½ tsp sea salt flakes
½ tsp vanilla extract
1 egg, beaten
150g plain flour
½ tsp bicarbonate of soda
125g chocolate chips
Preheat the oven to 200ºc.
Put the butter, sugar, salt and vanilla extract in a bowl, and mix together until softened.
Add the egg slowly and mix in. Sieve the flour and bicarbonate of soda together and add it gradually to the butter mixture. Stir in the chocolate chips.
Spoon the mixture evenly into four ramekins.
Bake for 10 to 15 minutes until firm at the edges but gooey in the middle!
Serve whilst still warm with cream or ice cream.
